I have a 1-quart slow cooker from Target that I LOVE for my 2-person household. I make steel-cut oats in it, and legume dishes like bean and split pea stews. I also have a Fagor multi-cooker that pressure-cooks, cooks rice, and does a "high" setting for slow cooking - very handy! :)
A few years ago we were at a store called Big Lots shopping for White Elephant gifts. We came across a crockpot shaped like a football. We didn't buy it (and would come to regret it each White Elephant since.) However, we did buy a small crockpot called The Little Dipper, which we kept. We've only used it to make oatmeal, but it is a handy size if you aren't feeding more than 2 people (or planning on freezing stuff.)
I got the recipe from Alton Brown. It is the best oatmeal I've ever had. I just youtubed Alton Brown and oatmeal and wrote down what he said to do. We reduced the amounts to fit our tiny crockpot, and it actually worked out just fine. These are the original amounts.
1 cup of Irish steel cut oats 4 cups of water 1 cup of cream 1 to 2 cups dried cranberries or an assortment of dried fruit
Put all in a crockpot. Leave on low overnight.
Taste first. If needed add salt.
My fiance's mom frequently makes stews and soups in her oversized crockpot for freezing.
I have three crockpots. One is a 1 quart that I use for hot dips at parties or for making oatmeal. I have a 2 quart that I use for crockpot casseroles. A tortilla will just fit inside it flat so it is great for making tortilla stacked casseroles in. I also have a big 6 quart that I was given as a wedding present. I do roasts in that one, stews or OAMC recipes that require bigger space.
Crockpot cooking is the best. I try to use mine at least once a week, if not more often.

I've got the original avocado green medium sized Crock Pot from the 70's. Worked for my mom and works for me. And now it's a nostalgia factor.
I had a 6 quart Rival that was programmable and loved it! The insert broke though and couldn't be replaced. I really miss that one!
