Mandolin

I bought a small hand held mandolin back in December. I've used it occasionally but I'd like to use it more. Do you have one? What do you use it for?

Cucumber salad! It's perfect for those thin, translucent slices that soak up vinegary goodness.

Also, homemade sweet potato chips. Sweet potatoes are so hard to slice easily by hand, but not with a mandoline.

I also use mine for cucumber Salad, but my salad is sour cream based. I use it for onions too...for burgers and stuff, perfect round slices. I use it for potato slices for garlic parsley potatoes.

I treated myself to an Oxo mandoline a couple of years ago. I love it for fennel salad, where the slices need to be super-thin. It's also great for making gratins.

I use mine for cucumbers too....and when slicing potatoes, especially for my mother's Pork Chop and Potato Dinner which I wrote about here. I wish my photos were as wonderful as Rachel's!
