My new favorite recipe is chicken and dumplings in the crockpot - chicken breasts, butter, cumin, onion, garlic, parsley, chicken broth and cut up biscuit dough as the dumplings. Even my chicken-hating daughter says it is her favorite meal and wants it once a week!

That is actually a toughy to decide one... but I think I will have to go with Chicken-Pot-Pie!
Tortellini soup! I use this basic recipe and add different veggies and seasonings depending what I have on hand or am in the mood for.
Chicken and dumplings! With lovely scallion-flecked dumplings spiked with cayenne. mmm...

A very simple, but easily dressed-up risotto, usually with shallots. I just got some saffron and am looking forward to playing with it here.

Cooking Light has a recipe for Chicken in Provencal sauce. We make it at least twice a month.
I would make chicken noodle soup with thick egg noodles. Yum!
Most definitely paella! The chicken, sausage and shellfish stay moist and flavorful. Mmmm

Rice made with chicken broth instead of water is GOOD.
I use chicken broth so often but my favorite is for wild mushroom risotto! YUM!
